Babica's Radicchio Winter Salad

  • mixed leafy greens (radicchio, arugula, leaf lettuce, spinach) 
  • 1 grapefruit 
  • 2 tbsp pine nuts 
  • 1 tbsp olive oil
  • 1 tbsp 100 % pumpkin seed oil
  • 1 tbsp apple cider vinegar 
  • salt, pepper


  1. Wash and slice the leafy greens. Halve the grapefruit. Squeeze half of the grapefruit into juice and slice the other half into small pieces. 
  2. For the dressing: mix together the grapefruit juice (remove the seeds), apple cider vinegar, olive oil and pumpkin oil. Stir well. Season to taste with salt and pepper. 
  3. Toast the pine nuts in a pan for 2-3 min, until golden-brown color. 
  4. To serve, mix the leafy greens and the dressing. Add pine nuts and grapefruit pieces.
