Ingredients:
- mixed leafy greens (radicchio, arugula, leaf lettuce, spinach)
- 1 grapefruit
- 2 tbsp pine nuts
- 1 tbsp olive oil
- 1 tbsp 100 % pumpkin seed oil
- 1 tbsp apple cider vinegar
- salt, pepper
Directions:
- Wash and slice the leafy greens. Halve the grapefruit. Squeeze half of the grapefruit into juice and slice the other half into small pieces.
- For the dressing: mix together the grapefruit juice (remove the seeds), apple cider vinegar, olive oil and pumpkin oil. Stir well. Season to taste with salt and pepper.
- Toast the pine nuts in a pan for 2-3 min, until golden-brown color.
- To serve, mix the leafy greens and the dressing. Add pine nuts and grapefruit pieces.
